I am so glad I made this, it is utterly yummy, particularly after it comes out of the fridge. Perfect for breakfast with a glass of fresh orange juice.
Turn the oven on to 190°C
1/ Mix the dry ingredients:
- 1/2 cup corn flour
- 1/2 cup of split pea flour
- 1 cup oats
- 1 teaspoon baking powder
2/ Now make a well in the middle and mix in the wet ingredients:
- 3 tablespoons of maple syrup (I prefer this to agave, personal choice)
- 1 flaxegg
- 1 large, mashed banana
Stir everything together and press into a pre-buttered tray.
3/ Top with 125gr of fresh blueberries.
4/ I then made a topping so the blueberries were covered with:
- 3 tablespoons of almond meal
- 2 tablespoons of soya margarine
- 3 tablespoons of pure cane sugar
Mix and spread evenly over the fruit.
5/ Place in the pre-heated oven for 30 minutes till the top is golden (this will make it squeegy) or you can leave it a little longer so it crisps up.
Hope you enjoy this recipe as much as I do… you can also have these bites with a natural (unsweetened) yogurt of your choice and fresh papaya… it is divine!
