Vegan Breakfast buns

I realised late last night that I had run out of breakfast for this morning and decided to bake something (as you do).

I chucked in the ingredients below and hoped they would come out awesome…. when I got the goodies out of the oven (lovely smell in the house), they looked golden and  crunchy on the outside and made me want to dive straight in. Fortunately, I held it together and enjoyed them with a nice cup of coffee this morning instead.

There is no margarine, as I counted on the natural oil from the almond flour.

  • Almond Flour: 2 big tablespoons
  • Self raising flour: 2 big tablespoons
  • Oatmeal: 1 heaped tablespoon
  • Sultanas: as much as you like
  • 1 flaxmeal egg
  • Maple Syrup: 3 tablespoons
  • Vanilla: 1 teaspoon

Mix it all up until you obtain a thick paste. I spooned 4 blobs on greaseproof paper and baked in a non-preheated oven for 19 minutes at 180°C. I guess you could opt for little heaps instead. If you do this latter option, you will need to alter your baking time.

Result: they are just sweet enough, soft in the middle and ever so slightly crispy on the outside. Enjoy!
