I can take no credit for this recipe, it is solely Harry Eastwood’s… and it is AMAZING.
Who would have thought that cooking butternut squash with almonds and apricots (plus there is no butter/marg) would be so good??? well, me, I have to admit, this is not the first of her recipes I try and they have all been marvelous.
And for those who do not like vegetables… try it, or get someone to prepare it for you as you will never guess there are sneakily vegetables hidden in the cake.
I do recommend the book, it is a great investment and it is full of healthy recipes!
