Vegan Maple & Pumpkin pie

I LOVE vegan puddings… hence how I came up with this… after feeling a little sick from the peanut butter overdose, I put the following ingredients in the blender:

1 cup of pumpkin puree (Libby’s as before),

one grated granny smith apple,

1 and a half teaspoon of baking powder,

1 cup of soya margarine,

3 tablespoons of maize flour,

3 tablespoons of maple syrup,

and 2 flaxmeal eggs (2 tablespoons of flaxmeal with 3/4 cup of water).

Once again, blend 🙂

In the oven for about 45 minutes (to make sure it is set properly) on 180 degrees.

Top with a mixture of 2 tablespoons of melted coconut oil, a couple of tablespoons of maple syrup and one of coconut milk. You can let it sink in and put in the fridge to eat cold later or just have it warm… your choice.

Not tried yet but am guessing, this is going to be nice with a scoop of smooth vanilla Swedish Glace. On your spoon, get set, yummmmmmmm
