I am hoping that my quality of pictures will improve as I go (sorry about this one).
This one is one of my favourite… you can change the fruit and the spices as you wish.
Version 1: Banana, coconut and blueberries omelette
I started by adding a teaspoon of coconut oil to the pan.
Then I mixed 2 eggs with 1/2 cup of coconut flakes and a small sliced banana. Cook till golden and flip over. At that stage, add a handful of blueberries on top so they can heat gently and release a little juice.
Version 2: Coconut and blueberries omelette
As previously, I heat up 1 teaspoon of coconut oil.
I mix 2 eggs and 1/2 cup of coconut flakes. You can proceed as above OR add the coconut eggy mix to the pan and immediately sprinkle the blueberries on top. This gives them the opportunity to warm through as the eggs cook when you flip the omelette over.
Delicious either way and no sugar added.
